The Mycelium actually didn't have particularly great minerals.

The high mineral output was from Maera's AR mineral fountains. It doesn't really matter much in the late game what mineral settings Mycelium had, by the end the M&M alliance was drowning in minerals due to the Maera's AR mineral fountains producing more minerals than both races could spend.
