I think that a single immunity is a good choice for a lot of races.
More than one can't be justified, I don't think, point-wise, in most cases. I'd take total terraforming over additional immunities, or just really wide hab ranges.
Tri-immune is better than dual immune IMO, because it does at least partially eliminate the need for colonial scouting, and makes every single planet a perfect breeder world. It is BLOODY expensive though.
