Since you are THE host, you get all the priveliges of there of.
I would recommend vanilla style universe: medium sparse/normal with Accelerated Start. It is fairly important to have lower density stars destribution to preserve the game flavour, 'cause people in dense games just go for "I've lots of res, what do I care for tech settings?" approach.
