Me too! I've spent 100 turns with mop-up, building wave after wave of bombers, and still I'll need at least another 10 turns before I can cleanup all the 180 planets required. 
Update, 5 turns later:
Yr 2602: Eagles & Berserkers just went dodo, completing the 8 AIs dead. In fact, only 2 of the remaining AIs aren't on the brink of extinction. I colonized 146 planets, with 14 more under way, but at an optimal rate of 4-6 AI planets cleansed per turn, it'll be another 4-5 turns before the challenge is completed, so it's over for me.

I started very aggressively to both spread my population for growth and to get missing tech (especially W). Most of my W tech came from pop-drops and not from scout battles. So, first seven turns I was pop-dropping one planet per turn and getting a level in W each time - Wizzle (w5), Blue Giant (w6), Mars (w7), Hill (w8), Yuppie Puppy (w9), Spittle (w10), Blinken (w11) and a few turns later - Witter (w12). In 2456 I had w10, which gave me the ability to defend and enough breathing room. I also didn't build mine layers - all the AI fleets coming to my bases were free minerals.
Once I did my land-grab, I spent 10-15 turns getting my population/resources/minerals up and catching up in other tech areas. In early-mid 2470's I started building jihad CC's and cherry b17's and started expanding East (towards House Cats). I took minerals from every planet I killed but only colonized green ones - my population was still low and I had to balance for growth. Leaving red planets unoccupied gave me additional opportunities for pop-drops to get the tech I wanted - AI was colonizing with 800-1000 colonists, so it was all easy pickings. In late 2470's I started building Jihad BB's and it was all smooth sailing after that. My plan was simple - build a lot of small fleets (4-5 BB's and 5-10 B52's) and go planet to planet annihilating everything in my path and then follow with a wave of colonization.
There were three general things I could've done to speed this up:
- Optimizing bombing paths. Instead of going planet to planet, I could have skipped some planets so that my new fleets didn't have to travel 3-5 turns before they could hit their first target
- Deal better with AI mines. I never had enough sweepers, which kept slowing me down
- Build more b52's - at some point I got sloppy and stopped making them
