Let's see now:
- Jelly: As far as I know, jelly is made from strained and filtered juice and therefore contains no ground-up seeds or fruit pulp. It is transparent.
- Jam: Jam contains fruit pulp and can contain ground seeds (like blackberry jam containing the 'crunchy' seeds)
I'm pretty sure the above is correct, but I'm a bit fuzzy on 'preserves' and 'marmalade'.
I *think* preserves contain small chunks of fruit or rind, but don't know if the chunks are in clear (transparent) jelly or in jam.
As for marmalade, I've only ever heard of orange marmalade, and therefore theorize that marmalade is ground-up fruit rind in clear jelly.
Any of our European friends care to enlighten me?
