I can do that, but it doesn't give me a speed setting. And I need to set the speed to warp 10 to keep up with the MT. I'm pretty sure it won't work and I don't really want to test it in a pbem game.

It doesn't give you an speed setting because the speed will be "as fast as need be", fuel permitting, with Warp10 as max, even if it means risking failure of non-Warp10-safe engines, hitting minefields, or actually overshooting a "targeted" fleet who hit mines or had its engines fail.
As others have said, you cannot "follow" the MT. But then you don't actually need to. Just pick another fleet of yours, any will do, to target the MT (and actually meet him, preferably this turn) and have your freighters target that fleet. It will work. You can even testbed for it.

You're contradicting yourself. If selecting the MT as the current waypoint will follow it then there's no need to set a waypoint along the MT path.
Will this work?
Oh, and there's only fuel for one shot, not two.
And there is no other ship that can catch the MT in one turn.

I tested it - and it did work. I then used it in the pbem - and it failed. Perhaps because I simply forgot to set correct waypoint? Or perhaps because it was moving at warp 10?
Oh well, In theory it should be possible.

If you don't have a fleet of your own to target that you that can get to the MT, perhaps you have an ally who has a fleet who can do you the favor of targetting the MT. Then you could target your ally's fleet.
Or perhaps you can see someone else's MT trading fleet that is on target to meet the MT next turn and target that fleet.
